Hop Pellets
Amarillo
6.0-9.0% Alpha acid. Similar to Cascade and Centennial
with an alpha acid level that falls right in between
the two. Good citrus character. Great for bittering.
Okay for aroma / finishing.
Cascade
4.5-6% AA. The ubiquitous American hop. Classic
grapefruit aroma and flavor. Great for bittering,
aroma / finishing, and dry hopping.
Centennial
9.0-12.0% AA. The big brother of Cascade, Centennial
offers many of the same qualities but has double
to almost triple the alpha acid levels. Perfect
for bittering IPAs and pale ales. Avoid using as
an aroma or dry hop, as you'll be wasting alpha
acids.
Chinook
11.0-13.0% AA. A very unique hop with obvious pine
aroma and flavor. This is best used in moderation
and should only be used as a bittering hop as it
requires a full boil to remove its harsh, unpleasant
qualities.
Cluster
5.5-8.5% AA. An underused hop by homebrewers, Cluster
works great both in bittering and aroma. Has a very
pleasant spicy quality with light floral aromas.
Works great in a wide range of beers from pilsners
up to the darkest of beers.
Columbus
10.0-13.0% AA. An odd, but very useful hop. Extremely
pungent hop that starts out smelling catty but,
if given a full boil, winds up providing very clean
bittering. While it is not recommended that this
hop be boiled any less than 60 minutes, strangely,
this hop can also be used as a dry hop. Just remember,
"cook it long and hard or not at all... but
nothing in between" and you'll find this a
very useful addition to your brewing cupboard, regardless
of the styles you brew.
East Kent Goldings
4.0-5.5% AA. A classic English hop. Usually used
as an aroma hop, but can be used through out all
phases of brewing with good results. Provides a
pleasantly mild herbal, floral aroma and flavor.
Fuggle
4.0-5.5% AA. The ubiquitous English hop. While this
hop is usually considered an aroma hop, it can be
used in all phases of brewing with good results.
Perfect for almost all English and Scottish ales.
Provides solid spicy and herbal qualities. Some
call this the big brother of East Kent Goldings
Galena
12.0-14.0% AA. A complex hop, Galena is usually
best used for bittering only, and should be used
judiciously. Spicy, fruity / citrusy. A little goes
a long way.
Hallertau
3.5-5.0% AA. One of the classic, noble, German hops.
Spicy, flowery, and herbaceous. Perfect for all
phases of brewing, especially for German ales and
lagers. Great aroma and flavor.
Magnum
13.0-15.0% AA. A classic bittering hop with loads
of spicy flavor and alpha acids. Works great with
many styles, especially IPAs.
Perle
6.0-9.0% AA. German hop with respectable alpha acids
and clean, almost minty quality. Good for many different
styles as both a bittering and aroma hop.
Saaz
2.0-4.0% AA. A unique hop with very floral aromas.
This is a light hop that is best used for aroma
in the last 15 mintues of boiling and should not
be used with stronly flavored or highly aromatic
hops, as its qualities will be easily overshadowed.
Best used with German and Czech pilsners and Belgian
ales.
Simcoe
12.0-14.5% AA. One of the most unique of the newer
hop varieties. Great for both bittering and aroma,
Simcoe has a perplexing blend of pine and citrus
that works really well. This hop works best when
combined with other strongly flavored hops or left
on its own. Great for American IPAs.
Spalt
4.0-5.0% AA. One of the classic, noble, German hops.
These spicy, "woody" hops can be at any
phase of the brewing process but is at its prime
when used as an aroma hop in the last 15 minutes
of the boil. Great in German lagers, but can be
used in many styles.
Styrian Goldings
4.0-6.0% AA. Similar to fuggles, but usually has
a slightly higher alpha acid level. Very common
in Belgian ales and some English ales.
Tettnang
4.0-6.0% AA. One of the classic, noble, German hops.
Mild spicy aroma and flavor. Great for German lagers
and wheat beers and American lagers. Considered
an aroma hop, but can be used for bittering as well.
Willamette
4.0-6.0% AA. An American version of Fuggles. Spicier
than fuggle but slightly less aromatic. Can be used
interchangeably with Fuggle.
